This is the scenario:

Bought a EMD, in a niche that has low competition - dentist niche in city
Kw in title, LSI in some text on the homepage

This is what happened:
registered domain, installed local biz wp theme
few days later website appeared on 2 page for kw, with the default lorem ipsum showing in serp results.
edited the lorem ipsum to proper text to include lsi, the website is now on page 3 and still dropping, this time showing the edited text.

anyone can shed some light on this? i have a feeling my onpage is over-optimized but how do i know for sure? Thanks guys.

how do i know for sure?

Test it.

Make some basic changes, and keep track of what you did. If you see positive movement, good. If not, revert and find a new variable.

This is just Google Honeymoon. Most people experience this. You create a new site or page and it will sometimes rank very well for 24-48 hours before falling back to where it should be ranking.

Here's a pretty shitty explanation of it...I'm sure you can find a better one - but I'm lazy right now:

Your rankings should settle down to where they realistically should be after the first month of existence. From there, you just gotta start your SEO grind.
