This is true. I've had success using upwork, but it's more of a numbers game there. I remember when I bumped my going rate up by 50c, I was saw an increase of great writers.

Find weak competitor(s) within the niche
Choose a competitor that is lacking a certain area
E.G. Poor social presence or incredibly poor UX
Exploit this weakness by doing everything they've done (matching and exceeding their links etc)...

Personally I'd use a .com or .net. I wouldn't even consider a .org.
If you look at the top 20 sites in your niche but I assume 90% of them will be using a .com.
Also correct me if I'm wrong, but for seo, you're good with a TLD and you won't be disadvantaged in any way.

I've found that when creating the structure of a site, it's best to keep every category as broad as possible. So when planning from the top down, I ask myself can this category 'become broader'.
Say I wanted to review tablets and I had a structure like this:
